Since Javier Talaya started growing and marketing fresh mushrooms in 1986, our Company has combined tradition and innovation in order to supply the market with cultivated mushrooms of the highest quality. Nowadays, and under the management of the Talaya brothers (Jesús and Javier), we still use traditional methods to grow and harvest our production. Our staff’s honesty, professionalism, expertise and dedication are still the most valuable assets of the company. Our facilities cover an area of 10,000 m2 , of which 7,000 m2 are used for the climate-controlled cultivation of our mushrooms. We have 3 cold rooms , state-of-the-art cutting and packaging rooms and advanced climate control equipment in all growing rooms. In short, we have the machinery and the necessary tools to meet the needs of all of our customers, guaranteeing quality and strict professionalism.
Common name: Oyster mushroom.
General Characteristics: This species has been commonly named Oyster mushroom for its resemblance to an oyster shell. It grows in dense clumps on hardwood logs and stumps and on other tree species. This mushroom is quite variable in size and appearance. Its size is different depending on the age and the amount of substrate used, with specimens attaining diameters of up to 20 or 30 centimeters. The shape also depends on the age, changing from a convex shape to a flat shape.
The color can vary from light gray to dark slate gray with a purple or blue hue, and from light brown to brownish-gray; some varieties may have very bright greenish or blue-green hues. When cultivated, this species’ color can be varied at will by simply varying the lighting in the production facility. The gills are white or slightly cream and heavily decurrent on the top of the stem. The stem is short, slightly hairy at the base and always lateral. The cap’s flesh is white, quite tasty , slightly elastic, tender on the outer edges and more leathery as it approaches the stem. The stem flesh is very fibrous and thick; it is generally discarded , even though some growers use it to make pâté. This species is very common in Spain, above all on black poplar stumps.
Nutritional content and properties: It is a species rich in proteins, vitamins and minerals, very recommended for low-calorie diets. A drug called Lovastatin® used to reduce the level of cholesterol in the blood is made from this mushroom.

Setas el Pinar is a leading company in the cultivation of the Oyster Mushroom (Pleurotus Ostreatus). We are constantly researching on how to improve the productivity and quality of the Oyster Mushroom, which is our speciality. In addition, we have permanent experimental crops where we investigate how to grow new varieties to get superior quality at competitive prices. At present, we investigate the cultivation of the King Oyster mushroom (pleurotus eryngii), of the Black Poplar Mushroom or chestnut mushroom (Agrocybe) and of the Champignon (Agaricus).

VARIETIES IN RESEARCH
AGARICUS BRUNNESCENS
Common Names: The Cultivated Mushroom; Paris mushroom , Portobello
General Characteristics.- Among the varieties of champignons, the traditional variety bisporus (“bi” meaning two and “sporus” meaning spores), has a cap that can measure between 5 and 10 cm in diameter, greyish-brownish in colour, with cuticle that becomes torn into adpressed scales over a pale base; whitish toothed edges. The gills are initially deep pink and then cocoa brown.
The stipe is whitish, slightly pink near the ring, which is white, simple and fluted. The flesh is white, prone to redden slightly when cut, with a noticeable and pleasant smell.
PLEUROTUS ERYNGII
Common names: King Oyster Mushroom, King Trumpet Mushroom.
General Characteristics: This mushroom, so common and sought after in the lands of Castile and Leon, has a cap measuring 4 to 9 cm in diameter, that is convex, then flattens into a depressed centre and rolled rim. Cuticle is separable, color ranges from beige to dark brown, highly variable depending on the weather. Gills very decurrent, first white and finally ochreish. Stem usually eccentric and whitish.
Flesh compact, sweet and fragrant.
AGROCYBE AEGERITA
Syn: Pholiota cylindracea Gillet
Agrocybe cylindracea Maire
Common names: Black poplar mushroom; Chestnut mushroom
General Characteristics: This mushrooms has a cap of 3 to 14 cm in diameter, initially hemispherical and dark brown, and then flattened and paler. The surface is very smooth at first, then tends to wrinkle and crack. The gills are white initially ,but turn slightly ochre when the spores mature. The stem is long, generally curved, fibrous and whitish; with a membranous ring on the top that soon turns tobacco Brown on its upper edge due to the spores that fall from the gills. It grows in clusters, on stumps of poplars and other broadleaf trees. It grows any season of the year after the rains. The flesh is white, slightly brownish-grey, with a pleasant taste and smell. It is a good food when young, but adult mushrooms are mediocre food and should be discarded. This species can be considered as the first mushroom cultivated in the west.
